If you have some "boring" leftover boiled yam (or you're like me that don't care much for plain boiled yam), and you don't know what to do with them, you can make this delicious stir fried egg-yam I came up with.



Process:

Just cut up the leftover yams in bite sizes (according to your preference) and set aside.
Then cut up some onion (about half a medium size) and some fresh peppers in a different plate.
Break about 2 eggs (or more depending on the size of your yam) in a separate plate, add a little salt to it and whisk.

Put your pan of the fire (with the heat set at medium ), add about 3tablespoons of oil, swirl the pan to spread the oil evenly, then add the onions and peppers at the same time, and stir continuously.
When the flavour/aroma is out, then you add in the cut up yams (spread them across the pan and let them fry a bit), sprinkle in a little salt, stir continuously till they look a bit crispy/golden, then go ahead and add in your whisked eggs over the yam, allow the eggs to set a little (and bind to yams) before stirring until completely done.

Voila! Your stir fried egg-yam is ready to be enjoyed. 🙂
