Domestication of poultry occurred in Southeast Asia around 5,400 years ago. This could have started with people hatching and rearing young birds from wild eggs, but it later evolved into keeping the birds permanently in captivity. Domesticated chickens were initially used for cockfighting, and quail were kept for their songs, but it was quickly realized how useful having a captive-bred source of food was. Over the centuries, selective breeding for fast growth, egg-laying ability, conformation, plumage, and docility occurred, and modern breeds often look very different from their wild ancestors. Although some birds are still kept in small flocks in large systems, the majority of birds on the market today are raised in intensive commercial enterprises.
Together with pig meat, poultry is one of the two most widely consumed types of meat in the world, accounting for more than 70% of the meat supply in 2012; poultry provides nutritionally beneficial food containing high-quality protein with a low proportion of fat. To reduce the risk of food poisoning, all poultry meat should be handled carefully and thoroughly cooked.
The term "poultry" is derived from the West and English "pultrie," from Old French pouletrie, from pouletier, a poultry dealer, and from poulet, a pullet. The term "pullet" is derived from Middle English pulet and Old French polet, both of which are derived from Latin pullus, which means "young fowl, young animal, or chicken." The word "fowl" derives from Germanic.
