Vegetable Soup
Serves 8

- 4 heads of Spinach <--- this might seem like an insane amount, but it reduces in size once you've cooked it
- 250ml Palm Oil
- 2 Onion Bulbs
- Assorted Meat (as desired)
- 50g Ogiri <--- l love my ogiri
- 300g Tomato Purée
- Fresh Peppers (as desired)
- Seasoning to taste (maggi, etc)
- 4 tablespoons of Crayfish

~ Method ~

- Cook all your meats first, and save the stock (season as desired)
- Blend the onions and peppers together
- Heat the oil, and put the (now onion and pepper paste), then allow to fry whilst stirring occasionally
- I put my crayfish in at this stage
- After 10 minutes, put in the tomato purée, and fry for another 10 minutes. Times may vary depending on just how much you're making
** the secret to knowing when this has sufficiently fried is when the mixture settled at the bottom of the pot, and the oil rises **
*** at this stage, stir occasionally, having a non-stick pan would be a blessing **
- Put a tiny amount of your meat stock into the mixture, about 100ml
- Add the ogiri, and allow to boil. [never blend your ogiri, if you do, the taste overpowers your food]
- Add your seasoning, as desired
**** as the mixture dries out, replenish the moisture with the meat stock, but put in as little as possible. You want the mixture to be next to dry when you put the spinach in ****
- Throw your meats in; I go crazy with the cow foot, tripe, diced gizzard, beef, and goat meat. If mixture is dry, add a little of your meat stock.
- Allow to cook, stirring occasionally, and let the water dry out before the next step
- Put the cut up spinach into the mixture, and close for 5 minutes. You'll see that the water from the leaves would add a lot of moisture to the soup. Stir, and allow the soup to come together.
- Ideally, you shouldn't cook the spinach for more than 5 minutes.

If you have any left over stock, please save for another day.

Ingredients
4 cups of waina rice( it's different from the regular rice that we eat, it's kinda broken and white, it's used to make rice swallow aka tuwon chinkafa)
1 tablespoon active yeast
1 teaspoon baking powder
1/2 cup plain yoghurt (optional)
Onion (optional)
Sugar to taste

--Soak the rice for at least 6 hours, take out half a cup of the raw rice and cook till soft
--Blend the rice i.e the soaked and cooked rice together (you can add onion but it's optional though)
-- After blending, mix in the yeast and allow to rise for about 40mins
to 1 hour
-- After which you mix in your sugar, baking powder and yoghurt
-- Fry the mixture in a masa pan until golden brown on both sides.
You can serve it with the conventional masa soup or any other sauce of your choice. It also goes well with Suya or with tea. Enjoy smiley

It was standard during the first few weeks of her delivery.

And it was always a relish!

I haven't had this combo in years
