ikekings: Lol.. The meal is very light... I can manage it as an appetizer... Lol!! You sound like my brother. Whenever we'd eat rice & stew back home, he'd eat it and then ask where the main course was. An African man and his swallow! Okay. Next time I'll put a picture of food that sticks to your ribs. |

ogugua88: I had to eat it first. Too tasty. I outdid my mom! Lol. @Ogugua88 lol..... i was going to '' chew your head off'' when i went back to read the post that came with the Oha soup picture. yes ,you're right about the dry Oha leaves ,they dont do it for me at all.... the fresh ones are greener and awww....they make the soup so tasty with some cow leg and yellow pepper. @StellaMeza i made Some Egwusi soup 3days ago , as with every soup in my house,it never sees the light of day. So couldn't take any pictures . will send you the recipe and directions later. This was last night's dinner. BEEF TORTILLAS WITH APPLE PIE,and VANILLA/STRAWBERRY ICE CREAM couldn't get any Tortillas at the near by store, so I made mine , they didnt come out that great, but they did the job.

@Stellasmeza, here's the egusi soup recipe. Will put up step-by-step pics on www.frostedbakeshopng..com later. 1kg of beef, cut into 2-inch chunks 1 cup of egusi 200g of okporoko (dried cod), washed soaked in hot water 4 tablespoons of blended atarodo (habanero). You can use less, if you like 2 knorr double stock cubes 2 teaspoons of salt 1/3 cup of ground dried crayfish 2 cups of chopped pumpkin leaves 1/3 cup of palm kernel oil 5 cups of water Method Put meat in a pot, add salt, knorr cubes, blended pepper and water. Set on medium-high heat and cook for 20 minutes. Remove okporoko (cod) from hot water and add to the pot. Add crayfish too. Stir and cook for 5 minutes. Add palm oil. Cover pot and cook for 3 minutes. Add egusi, stir. Leave to cook for 3-5 minutes, stirring at intervals (egusi might burn if not). Add chopped leaves, stir and remove from heat immediately. Enjoy!

uzoo: @Ogugua88 Yeah, I knew someone would lol. We don't have fresh oha leaves here, so I did what I could. The oha flavor still came through, and dad licked his bowl, so no complaints lol. I've always wanted to make tortillas by the way. Were they yummy? Which recipe did you use? |
