Yeah, I knew someone would lol. We don't have fresh oha leaves here, so I did what I could. The oha flavor still came through, and dad licked his bowl, so no complaints lol.

I've always wanted to make tortillas by the way. Were they yummy? Which recipe did you use?

The Tortillas tasted great , i used the beef stock from the beef i boiled for my egwusi the other day,so the fillings made it really tasty.

i was going to post the recipe for the egwusi but i just saw yours now.

i do use a different method from yours though.

for the ground Egwusi it self i usually mix it with a little bit of water to form a thick rough paste.And then dump them in balls into the boiling pot .That way they get to cook much longer with out burning.

for the leaves i prefer to use Bitter leaf that has been thoroughly washed.It gives the soup that bitter yet savoury taste.

then i blend the cray fish ( the big ones and the tiny ones) with onions ,red peppers,yellow peppers and the local seasoning made from soy bean (called iru in yoruba, Ogili in Igbo,and dawadawa in hausa ... i think).A lot of people in my house can't stand that stuff 'cos of the smell. But i tell you,it totally works for me,can't do with out it when
making soups.

I also use Dried fish washed in hot water (the really black ,dried fish,round in shape and lined on a stick)

Lastly ...my favorite ,the Cow leg meat.The flavour from the bone marrow is what makes the difference in the stock.

@Uzoo, yes, I love egusi with bitter leaves. In fact, my fave vegetable to use with egusi is uziza. I also use uziza seeds. However, stella isn't from naija, and to be honest, finding the english names for irun, uziza, etc would have been a chore. This recipe is for the simplest form of egusi soup. It's really simple, but the taste is 'something like a phenomenon'. LOL
I'm trying your method of balling the egusi next time though, thank you for that.
