Hummm, never heard of anyu? You might have seen it. It look somehow like water melon, the inside is yellow and have small melon seeds (like egusi). I don't remember if the main egusi comes from it or from another type of melon though.

To Prepare Akara, you will need
Washed Beans ( I prefer big size Brown Beans)
Fresh pepper
Onions
Salt

Directions
In a blender or grinder, Add the quantity of beans you want with little water, enough to grind the beans without coming out runny.
If you have small kitchen top mortar ( it can be in plastic form, ceramic or wood), pour in the beans puree, if the puree is thick, add little water, the idea is not to have runny or loose puree.
Add in diced fresh pepper and onions (please the onion should be little). Add salt to taste, mix it very well till you cant see any trace of water, heat your oil to medium and continue turning your beans puree, scoop in with spoon ( if you have a small ice cream scoop, it will work well).
Fry and turn at intervals till cooked.

Twas yummy!
Though I am not a big fan of unripe plantain, I prefere it a little ripe and not too ripe. But this one was really good.

It's been ages i ate anyu you just brought back memories! Looks yummy and combo with plantain is dope.
