An employer wants to process what you call 'full visa' (3 month employment visa) for someone, it's a professional job, the salary is a bit on the high side. Is it necessary to get certs attested before the employment visa can come out? Or perhaps the visa comes out, however at the point of applying for Emirates card and residence permit in Dubai, attested certs are submitted.

2. For feeding daily, it depends on your eating habits.. cooking is always and very possible if you have an accommodation with kitchen ....
3. They MAY disturb if you show sign of weakness or fear.. be tough and see you arriving your destination...
