1. Cook the pasta shells (Conchiglioni). They cook a bit longer. Add some salt to the water.

2. Chop an onion, a big tomato or two small ones, a bell pepper, 3 mushrooms and 10 green olives (I used the ones with chilli paste inside) in very small pieces.

3. Fry the onion in a tablespoon olive oil or any vegetable oil of your choice. Add the tomatoes, some salt, pepper and fry for about 3-5 minutes. Add 1-2 tablespoons of pesto rosso or verde (I prefer rosso) and a tablespoon water. Let it cook for about 3 minutes and set aside.

4. Now fry the bell peppers, mushrooms and olives in a tablespoon of olive oil (or vegetable oil). Season with salt, pepper and dried Italian herbs or any other dried herbs of your choice. After a few minutes add 1-2 tablespoons of cream cheese and fry until the cheese is warm.

5. Add the tomato-pesto paste and mix everything together. Add more seasoning if necessary.

6. Put the filling in the pasta.

7. Garnish with pine nuts or alternatively cashews though the latter may be too big. I also used parsley to decorate the dish but I would have preferred scent leaf which I did not have anymore.

I fried everything on medium heat. You don't have to buy the pesto, you can make it. It is easy to make but I bought mine.
This recipe is for two people. If you want to feed more people, do the needful. cheesy
