Hello Foodlanders! This is my easy bread recipe made with the simplest of ingredients and detailed instructions showing you how to make simple coconut bread from the comfort of your home. This homemade bread recipe can be made by both beginners and pro bakers. Let us go a baking! ![]() The aroma of freshly baked bread gives that unexplainable joy. Don't be afraid to try this recipe as a beginner. The recipe is pretty easy to follow. Step 1: Assemble Your Ingredients Below are the ingredients you'll need to make this yummy bread: • 2½ cups flour • 3 tbsp sugar • 1½ tsp active dry yeast • 1 cup warm coconut milk (you can use normal milk) • 3 tbsp margarine or butter • 1 egg • About 2 tbsp shredded coconut Pics 1. Step 2: Activate your yeast This is a very simple process! Mix about 1 tbsp sugar and coconut milk (or milk) together. Note: Ensure the coconut milk is not too hot or cold, you need it to be warm so.the yeast can be activated. If you're making normal bread (without coconut), you can mix powdered milk with warm water to get the 1 cup milk. After mixing the milk and sugar together, sprinkle the yeast on the surface. Cover and allow to sit for about 10 mins. After 10 mins, you will see the yeast pulp on the surface. This here proves that the yeast is activated Pics 1. This is how an activated yeast looks like Step 3: Add the Other Ingredients Add in the egg, remaining sugar, flour and shredded coconut. Don't add the butter yet. Mix together till a sticky dough is formed. Add in the butter and mix together. Pics 2, 3 & 4. This shows the flour, egg and butter been added 15 Likes 10 Shares

Step 4: Knead the dough Kneading is very important for the bread texture. It allows the gluten form, which enable the dough to be light and fluffy. You can either knead by hand or with a dough mixer. Transfer the sticky dough to a clean and well floured surface. Knead till the dough is soft and elastic. This should take about 10 minutes if one is kneading with the hands. Pics 1. A well floured surface Pics 2. Sticky dough on the surface Pics 3. Dough after 5 mins of kneading with hands Pics 4. Dough after kneading for 10 mins 14 Likes 6 Shares

Step 5: First Rise Place the kneaded dough in a greased bowl. Cover with a kitchen towel or cling film and allow to rise for about 50 mins - 1 hr or till it doubles its size. Pics 1. Kneaded dough in the oiled bowl Pics 2. Risen dough after 55 mins You can see the difference. The transformation is just crazy. This is the job of the yeast 16 Likes 5 Shares

Step 6: Punch Down (Deflate) the Dough and Shape It Punch down the risen dough. This helps the bread have a consistent and good texture. Shape the dough to your desired shape by cutting into 8 equal parts, rolling and shaping into a ball shape. Place in a greased/floured pan. Pics 1. Deflated dough Pics 2. Cut dough Pics 3. Step 8: Second Rise Cover the dough and allow to rise for about 20 - 30 mins in a warm place. This helps with the dough shape and texture. While the dough is rising, preheat your oven to 180 degree Celsius. You can also use your stove or charcoal oven just ensure that the temperature is not very high or low else you'll end up with a burnt undercooked bread. Pics 1. Risen dough coated with coconut milk Step 7: Bake Coat the surface of the risen dough with egg or milk. Place in your preheated oven and bake for about 25 - 30 mins. You will know it is fully cooked when the top is golden brown Pics 2. Bread in the oven 15 Likes 6 Shares

Step 9: Cool and Chow ![]() When cooked, remove from the oven and allow to cool for about 10 mins. Proceed to remove the bread from the pan onto a cooling rack or plate. Serve with your preferred spread, egg, akara, moi moi or tea! I had mine with milk and butter Pics 1. Bread removed from the oven [b]Note: Remove the baked bread from the pan after 10 mins else it will steam and become soggy. Nobody likes a soggy bread. Cut the dough into 8 pieces if using a small pan like mine to give room for more proofing of the dough. 47 Likes 8 Shares

Wow! I'm so going to try this. What kind of butter do you recommend for this, the soft blueband (which is a bit salty) or the harder one? So one doesn't need baking powder to make bread, I didn't know o 7 Likes 4 Shares |
