The interviewer was really nice and friendly. I'll advise those preparing for interview to be calm and truthful. It's just you having a conversation with another person.

At around past 11am at the VI center I tried amending my appointment and I got September 1st and at around past 2pm I tried amending again then I got 26th of August (today),the interview went well and this are all the questions:

My question is this, do I need to declare to the Visa officer during my interview tomorrow that am getting married soon and that my wife will come to join me within a month or I should just maintain my single claim and not say anything.
Is there any consequence if I do not inform the visa officer about this?
Will it be a problem when she's applying for dependent visa after our wedding?
I need quick and urgent response to this as my interview is tomorrow.

You're single until you sign the dotted lines. There's no consequence for saying that you're single even if you're getting married 5 hours after the statement because it's the truth.
After you get married, she can apply as your dependant and submit documents such as your wedding certificate, wedding pictures, a few pictures before your wedding, your BRP/vignette and any other document that can strengthen her application in connection to you.

This part of their portal has an issue
Once they have confirmed appointment date and time to you via the mail they replied to you, just go there on that day. They will sort this one out manually

what we did when we got there on that day was that we now had to choose a farther date(if you check farther dates, you will see that it's farther dates that are available) so that the registration could complete and we could get the reference number. Then the guy attending to us now edited the the date to that day from his own end of the portal

So you have to wait to do it in their office so it doesn't look like you deliberately chose a farther date.

I was able to get a closer date after trying and trying
I got 8September now and the date on my mail was 15 September
Is it best for me to go September 8?

Well as far as I know, to get a new date, I wrote over the previous correspondence. and In my own case, I was negotiating for a farther date not a closer one.So it was over a mail dialogue and not via that link. I am not sure they consider the validity of choosing via that link as I think it had a glitch.
Alternatively, you could call their lines

It's just sticking to the facts as they are. If you're asked if you'll be getting married soon or having a dependant accompany you to the UK, then you should say yes, your fiance who will be your wife in few weeks will be joining you.
But the answer to your marital status question is "single" until you have a document to prove otherwise.
