One of my best spaghetti recipe... The taste is out of this world.. Less time and small ingredients needed.

INGREDIENTS
●Extra virgin olive oil
●Garlic
●parsley
●Tomatoes
●Scampi
●White wine
●pepper Flakes


1.....In a saucepan heat up some olive oil...Add your chopped garlic.. immediately you start getting the fragrant, put in your chopped tomatoes.

2.....Put in some parsley without chop, Cook for one minute.

3.....Add your scampi or shrimp.Cook until pink after 2 minute take out the parsley from the pan.

4.....Add a cup of white wine and season with pepper flakes cook for one minute.

5.....Take out the scampi and add your cook spaghetti and toss to coat, adding reserved pasta water like half cup and continue tossing until the water become creamy. At this stage the spaghetti cooking process continues. Then taste for salt.

6.....Return your scampi back to the pot, add some chopped parsley and little extra virgin olive oil.. Your pasta is ready.


NOTE

1...... Always drain your pasta three minutes before the recommended cook time

3......Not all recipe you add Curry, Thyme, Crayfish, seasoning cub like Maggi.. some of this things take away the natural flavour from the meal.

2....... Always reserve some water from your cook spaghetti, because you will need it later... The spaghetti water make the meal sweeter

3......After adding your pasta water, taste for salt before adding extra salt to your sauce, because the pasta water is already salty.

I see some people use sardine in making noodles. Why not buy sharwa fish. It is very sweet, the only issue na the bones. A full sharwa fish ranges from 80 - 150 depending on the size. Sardine ranges from 200 - 350.

For the fish, I think proximity matters... All in all, it's a win with protein value.

Thank you. I looked it up and the ones I picked are out of stock. I will see if i can speak with someone. They had ad on my Amazon feeds last week.
Got the stuff from carrygo. Used one park of the catfish for stew...I bought two packs - they were okay. The Cameroon pepper - very darkish and gave stew dark color grin I might not use it again and stay with my fresh habanero.
Melon was great - very clean. It's the native egusi for my fav ofe enu ale grin per my grandmother. I will order more.
Bonga fish was good but unable to order more than one grin i just cleaned, oven dry and chew grin

Blend the ingredients together(Excluding the Tomatoes)and mix it with the cook spaghetti tongue

Food photography is not all about focusing on the final stage which is the plating.

One can also use a picture to tell a story.. let people know what really happen before getting to that final stage..

I can't dish my meal and take it to another clean table and upload, pretending my table wasn't messy.

Only when you're into food styling or plating your main focus should be on the plate.. But for me, I did the cooking and also styled the food.. So not only the plate should show, my ingredients and other stuff for cooking should be among.

We all have different way of presenting food cooked in our kitchen to viewers.. Focusing on the plate only is not my thing.

I hope you understand.. Once again Thanks for the complement.

I plan on giving this a try soon ( within the next two weeks).. However from the ingredients I think I will be facing the following issues :

1. I don't know what parsley is I.e I don't know it's local name and don't know if it can be sourced locally at shoprite or any other big retail store. If it can't be sourced what are the alternatives I can use in its place?

2. What are pepper flakes locally? I've seen some food vloggers use it on YouTube but almost all of them are abroad so I don't know if it's available locally here in Naija. Maybe a description of what constitutes it can help me arrange an alternative to work with while trying it out.

As for the scampi, I will use fresh shrimp in its place.

Parsley is the english name, I do get mine sometimes in shoprite and also vegetable shops in major market.(mostly those people that sell fried rice ingredients)


Don't let the name Pepper Flakes confuse you, same thing as Crushed red chili pepper.. is called pepper flakes because of the texture and look.

You can use fresh shrimp.
