From what I have seen, the only Visa you are eligible for is 491 Visa but that's not a problem. In fact, you can apply right now to South Australia seeing that you have 8 years of experience. Please note that you'd need a minimum of 7.5 (in each of the Modules ie Listening, Writing, Speaking, Reading) in IELTS and minimum point of 65 ( This can be calculated here: https://www.anzscosearch.com/points-test/ )

The Organisation that will assess you is VETASSESS ( https://www.vetassess.com.au/ ) I am not familiar with their processes but I believe their website as well as info from this group should help. You'd need evidence of payment to prove you've been employed for all that period which typically is one or more of the below:

Payment evidence:

Payment evidence can include one of the following types:
Pay slips (ideally your first and last payslip);
Taxation Records of Assessment (bearing company and applicant name)
Bank Statements showing at least two salary payments, your name and the employer's name; OR
Employment-linked insurance / superannuation records (bearing company and applicant name).


If you are able to scale the IELTS hurdle, I really believe you have a great chance because it's not a common profession. Wishing you all the best!
