I don’t eat pepper soup outside because it is most times PEPPER, without the rich local taste.

Yes, the “basic” ingredient to make pepper soup is hot pepper, but we need ethnic ingredients to take it to the next level. I don’t know if you have ever tasted the pepper soup made for nursing mothers, you will understand what I mean, lol.

WHAT YOU WILL NEED;
1- Uda
2- Alligator pepper
3- Uziza seed (this is peppery, so watch it)
4- Ehuru
5- Ginger
6- Garlic
7- Fresh pepper (yellow or red)
8- Ground crayfish/prawn (optional)
9- Nchanwu leaves (scent leaf or efinrin to Yoruba people)
10- Uziza leaf (optional- though it gives a nice twist)
12- Dry fish (optional)
13- Kilo of chicken (I used orobo, soft one)
14- Two thick slices of yam (for 3-4 normal persons)

NOTE;
1- This list is not all encompassing.
2- I use dry prawns for all my native cooking because it has a richer taste than crayfish.
3- I added dry fish because I also believe dry fish has this flavour it brings to local dishes. So I throw a little into my pepper soup, irrespective of the type (goat meat, assorted...etc). Personal preference.

I have to prepare catfish pepper soup tomorrow and I wanna get that taste I usually get at the bars and restaurants. My neighbor mentioned garlic earlier but I'm still scared. I know garlic and ginger goes well with chicken and maybe goat too but fish? Not too sure

What do you think poco?

Name - Poco's Kitchen.

Catfish peppersoup is one of the easiest meal to prepare....This is how we do it..Elvis presley style -

Ingredients:
Cat Fish
4 Ehu or Ariwo or Calabash Nutmeg seeds
Habanero Pepper or chilli pepper (to taste)
A few scent leaves
2 medium onions
Salt (to taste)
2 big stock cubes

Using an old frying pan, i roast the Ehu seeds (stirring constantly) till you can smell it. Don't worry you will know when it is OK to take it off because it has a distinctive aroma.
Then i peel off the membrane from all the Ehu seeds and grind with a dry mill.
Cut the onions into tiny pieces.
Wash and pick the scent leaves and tear them up with your fingers into small pieces.

Cooking Directions:

I place the pieces of fish in a pot and pour water to just cover the fish, then i add the stock cubes and bring to the boil.
Once it starts to boil,i add the ground ehu, onions, habanero pepper and scent leaves and continue cooking.
Once the catfish is done, i add salt to taste and leave to simmer for about 5 minutes and it's ready!
Catfish Pepper Soup should always be served hot. It can be eaten alone with a chilled drink. I love to eat it with Agidi, Boiled White Rice or Boiled Yam.
