THE MIRACULOUS 'WORK' OF PROBIOTICS. In the accerated scientific world, man have turn its satellite to the ultra space,getting precisely the distance between nearby heavenly bodies. Man's microscope have also been able to piece through the minute cells even the DNA that is about 1.7-- 8.5cm with 500 -- 2.5 million nucleotide pairs. Consequently, in the field of food science and industrial bio processing is a study on probiotics but,before we axe down on the importance of this scientific term,let's get to know its concept. The concept of probiotics is attributed to a Russian gerontologist Elie Metchnikoff(1845- 1916). Probiotics are considered to be"good" bacteria and yeasts that happenes to be beneficial to humans gastrointestinal track. I know this will sound absurdic especially when most bacteria are treated as "enemies" because of their pathogenic effect resulting in myraids of disease conditions in humans. In this context, the probiotics do the opposite by colonizing the entire human gut and reducing the ratio of pathogenic to helpful organisms. The action of probiotics cutting down on the number of "bad" organisms in the gut reduce a good number of GIT diseases like diarrhoea, irritable bowel syndrome (IBS) as well as suiting to the lactose intolerant persons. In some cases, they produce anti- bacterial substances that affect the growth of pathogenic organisms while some engage in the production of essential vitamines and minerals that are of necessity to humans. Species of organisms that can perform this "magic " include lactobacillus,Bifidobacterium, L. acidophilus, S. thermophillus, B. bifudus, L. bulgaricus add infinitum. Various foods have been vehicles at which these probiotics are consumed. common among them are yoghurt, kaffir( almost similar to yoghurt),Sauerkrauts, dark chocolate pickles etc. Producing these foods is the handy work of passionate and spirited food scientists who strife daily to improve our nutrition via food fortification, processing and preservation inline with world health organisation's (WHO) goals. To crown it all, making concerted effort to consume these foods will be of urge benefit to us and our families because of the actions of these probiotic enhancese nutrients utilization by the body, preventing micro and macro nutrients lost via diarrhoea, flatuence and so on.
