Food / Re: Where Can I Get Linseed Or Flaxseed by AmakaOne(f): 10:46am On Oct 23, 2008
you can get it online at http://www.gogoflaxseed.com/

they deliver anywhere in the UK.

flax seed apparently improves hair, skin & nails quality, aids weight loss, and prevents diseases such as arthritis, high cholesterol and high blood pressure

Food / Re: Nigerian Recipes by AmakaOne(f): 11:39am On Oct 21, 2008
@bece
shortening is any fat like butter or lard

@DUPSY

PANCAKSES
Ingredients

250ml (1 cup) flour
15ml (1 Tablespoon) White Sugar
½ teaspoon of salt
1 large egg
250ml (1 cup) milk

Method

   1. Mix flour, sugar and salt in a basin. Make a well in the centre and break in the egg.
Gradually stir in half the milk – a little at a time – beating very well.
Add the remaining milk and beat for 5 minutes.
If possible, allow the mixture to stand for an hour or more, as this makes the pancakes lighter.
Give it an occasional beating during this time.

   2. Melt 1 tablespoon of margarine in a frying-pan and heat it thoroughly.
Pour off the surplus, leaving just enough to coat the pan.
Pour in a very small amount of the mixture, and tilt the pan to cover it thinly with a layer of batter.
Cook over a medium heat until lightly browned, then loosen with a knife and toss or turn over with a spatula and brown the other side.
   3. Heat the fat in the pan before making each pancake, and keep them warm on a hot dish after cooking.

Food / Re: Is Salt Good For Me? by AmakaOne(f): 1:25pm On Oct 20, 2008
The truth is, too much water and not enough salt can kill you. Most people know that dehydration can cause serious health consequences. What most don’t realize is that too much of a good thing — WATER — can also be dangerous, even deadly.

It happens when the body’s balance of salt and water become quickly diluted. It affects the production of nerve impulses, and impairs mental processes. Cells take on extra water and expand. As they swell, they put stress on the body’s organs, particularly the brain, which has little room to expand within the skull. Sometimes Hyponatremia is caused by an underlying medical condition.

Sodium helps maintain the body’s electrical processes essential to transmitting nerve impulses and contracting muscles. When the body’s sodium content is depleted at the same time water level is increased, cells absorb more water and swell. Excessive water in the brain cells can cause seizures and in rare cases death.

The point is you need to replenish not only the fluids you lose when you sweat, but the salt as well. Nothing that comes out of your body is pure water. So you’ve got to replace it with both the salt and water, Not Just Water.

A serious loss of sodium can lead to weakness, dizziness, memory loss and nausea.

If the deficiency becomes severe, the circulatory system can collapse and the body can go into shock, causing fatigue, muscle twitching and fits.

To Reduce Fat and Calories
* Request items such as raw vegetables, banana peppers, jalapeno peppers, or pickles.
* Limit the amount of cheese, bacon and creamy dressings used.
*Ask for mustard or vinegar instead of mayonnaise or oil.

* To Reduce Sodium Limit items such as cheese, bacon, salt, mustard, mayonnaise, jalapeno peppers, olives and pickles.
* Top your sandwich with vegetables such as lettuce, tomato, green peppers and onions.

I think they are in most SA cities. I saw one in Johannesburg as well (Sandton) when I was there.

Food / Re: Addicted To Plantain Chips by AmakaOne(f): 2:56pm On Oct 16, 2008
I absolutely love plantain chips.

Here's a dip I make to go with the spicy ones when I have friends over. Found it somewhere on the net a while back.

  *  1/3 cup well-stirred unsweetened canned coconut milk
    * 3 spring onions , chopped
    * 1 teaspoon chopped fresh jalapeño chile, including seeds
    * 1/2 cup chopped fresh coriander
    * 1/2 cup mayonnaise
    * 3 tablespoons fresh lime juice, or to taste
    * 1 lb jumbo lump crab meat coarsely shredded

Preparation

Blend coconut milk, spring onions, jalapeño, and 1/4 cup  in a blender until smooth and pour into a bowl.
Whisk in mayonnaise, juice, and remaining 1/4 cup coriander until just combined.
Stir in crab and salt to taste

Yummy.
Great also for those super eagles Match nights   cool  grin

1. Drink - Strawberry Schnapps

Direction:

* Rinse the strawberries carefully.

* Leave them to dry in the shadow - on paper towel.

* If your berries are frozen - defrost them in the schnapps.

* Use a clean glass jar with tight-fitting lid.

* Fill 1/2 - 2/3 of the jar with berries.

* Fill up with clear, unflavoured Schnapps - 40% (80 proof).

* Steep for a few days in a dark place at room temperature,
18-20°C (64-68°F).

* Shake lightly and taste it from time to time.

* Strain and filter your infusion into a clean glass bottle or jar with tight-fitting lid.

You can serve your strawberry schnapps after it has settled for a couple of days. It has a fresh, fruity taste.

@ chukwubele
what sizes are the cakes you are talking about? a total of 21 cakes in one is HUGE my dear.
Or are you talking about cupcakes?

and your tiers are they
4th tier - Bottom
3rd tier - 2nd from bottom etc?

otherwise I think you may end up with a bit of a balance problem if you put as many as 12 at the top?

The closest I can remember of in terms of making a tree shaped cake is this one or alternatively  the souvenir cake tree?? It's made up of lots of little cakes all fully iced and decorated.

If I may ask why such a big cake?

lol @ Leilah

snails are best when they are still alive.

remove them from their shells. Then  rub and wash them with lime juice (or whatever citrus fruit is available locally) to remove the slime.
cut the cleaned snails into small pieces and then boil or fry them ( whatever takes your fancy)

Yum yum

bece:

thanks amaka1.dodo as in fried plantain or mixed with pepper and stuff like dodo ikire if u know dodo ikire.i saw ur posting on fondant icing please do u have another recipe apart from that of usin marshmallows?
Tanx

Welcome bece,
I meant just plain fried planatin. that is if you are going to serve it with some other spicy small chops like suya and peppered snail. It's a good foil for the peppery stuff.

The other fondant recipes that I have are a bit labour intensive and quite expensive to make, that is the ingredients are a little expensive, and I'm not sure that they taste all that much better than the marshmallow fondant.
Try this one.

Rolled Fondant

1 Tbsp. unflavored gelatin

1/4 cup cold water

1/2 cup Glucose

1 Tbsp. Glycerin

2 Tbsps. solid vegetable shortening

2 lbs. confectioners sugar

2-3 drops liquid food color/flavoring, as desired

Combine gelatin and cold water, let stand until thick. Place gelatin mixture in top of double boiler & heat until dissolved.
Add glucose and glycerin, mix well.
Stir in shortening and just before completely melted, remove from heat.
Mixture should cool until lukewarm.

Next, place 1 lb. confectioners sugar in a bowl and make a well.
Pour the lukewarm gelatin mixture into the well and stir with a wooden spoon, mixing in sugar and adding more, a little at a time until stickiness disappears. Knead in remaining sugar, icing color and flavoring.
Knead until the fondant is smooth, pliable and does not stick to your hands.
If fondant is too soft add more sugar; if too stiff, add water a drop at a time.
Use fondant immediately or store in airtight container in refrigerator.
When ready to use, bring to room temperature and knead again until soft.
This recipe yields enough to cover a 10" X 3" high cake.

Food / Re: Any One Knows How To Cook With A Microwave? by AmakaOne(f): 5:23pm On Oct 10, 2008
You can easily bake a cake in a microwave in less than half the time it takes to bake in a regular oven .

It works well for cakes that you are going to use frosting on as they don't come out with a golden brown crust like they would in a regular oven.

This cake can be done in about 6 mins. Very useful when you are babysitting a pair of hyperactive kids and their parents are galivanting all over the Jand grin

When it's cooled down you use frosting  as you would on any regular cake.

Ingredients
1 cup flour
1 cup castor sugar
1 cup hot water
3 tbs cocoa or 1.5 tabs coffee granules (Nescafe preferably or any rich dark roast) dissolved in a bit of hot water
1 tbs baking powder
1 ml salt
5 ml vanilla essence
2 large eggs

How to make

    * Put a baking trivet into microwave oven.
    * Grease dish (20 cm diameter x 8 cm deep). Line bottom of dish with greaseproof paper and grease again it again
    * Mix together flour, castor sugar, baking powder and salt in a bowl
    * Place cocoa or coffee essence into a mixing bowl, add the water and vanilla and mix well.
    * Add eggs and mix well again.
    * Mix wet ingredients into dry ingredients and using an electric mixer beat together for 30 seconds (very important).

    * Put cake mix into the prepared dish and place in centre of trivet in microwave and bake on full power for six minutes.

    * When time is up you may find the centre of top of cake is moist, blot with kitchen towel and press lightly.
    * Remove towel.
    *  Allow to cool a few minutes.
    * Turn onto cake rack, peel off paper and ice anyway you wish.

This cake freezes well.

N.B. MAKE SURE TO USE MICROWAVEABLE BAKEWARE.
I'VE FOUND THE NEW SILICON BAKEWARE TO BE JUST GREAT.
YOU CAN USE IT ION BOTH MICROWAVE AND REGULAR OVENS
