Mix together 1/3 cup of Pounded Yam flour and one cup of water in a microwavable bowl until it forms a thick paste, making sure there are no lumps. Mix pounded yam flour with water into medium consistency (Think same consistency as custard or pap/akamu/ogi) Add more yam flour if too watery Stir properly to ensure all flour properly mixed Put in microwave for 5 MINS If too soft, mixture was too watery (remember the next time :-) Dont worry, put in microwave for 2 more mins Stir properly with wooden spoon Alternative method Mix together 1/3 cup of Nigerian Pounded Yam flour and one cup of water in a microwavable bowl until it forms a thick paste, making sure there are no lumps. Place the bowl in a microwave oven and cook for 3 minutes on high. Take the bowl out and stir the mix. You may add more water to reduce the thickness to your desired consistency. Place the stirred mix back into the microwave and cook for another 3 minutes on high. Remove the cooked Pounded Yam and serve with your favorite soup or stew. |

Jesoul, I am researching the native names for most ofthe common ingredients that are used to make the popular dishes in Nigeria as well a s some regional specialities. Like : The many names of uyayak ighimiakhie or ikhememi in Edo edeminang in Efik manto in Ejagham kpankpan or ekuk in Ejagham-Etung ighirehimi in Esan dawo in Hausa; Uyayak in Ibibio ashobo, ashosho, oshogisha (Arochukwu) ora-ora (Awka) osshosha (Bende) osakirisa (Owerri) in Igbo apapa in Ijo-izon idisain in izon yurem in Nkem arida, arizan, ayida or ikoho in Nupe and aidan (Ife) or aridan (meaning cast no spell) in Yoruba. My problem I think will be with typing in say phonetic Yoruba as landis suggested. There must be a uniform way of writing Yoruba surely without having to add special fonts to the text? |

It has been recommended that we should be eating at least 5 pieces of fruit every day in order to gain the full health benefits of eating fruit. People who reduce their dietary energy density by adding water-rich foods, such as fruits and vegetables, and limiting fat intake lose a third more weight in 6 months compared with those who only decrease their fat intake, according to the results of a randomized controlled trial published in the June issue of the American Journal of Clinical Nutrition. |

Got this recipe from a friend and I tried it on Saturday. Starch (Usi) about half a big spoon (the spoon that u use to serve rice) Garri Akau (potash I think that's how the spell it) Lime/ Lemon Juice Native salt Meat (this can be from cow foot to beef u can even add snail) periwinkle (optional) Smoked fish (that dark brown round fish) palm oil Maggi cubes Rodo one big cooking spoon of ground cray fish everyone has their own way to cook this *Wash your dry fish very well as there will be sand in this Clean the Periwinkle with lime Juice * With the blunt end of a knife, top and tail the periwinkles and wash thoroughly *Boil your meat, add Maggi cubes and pepper (ie for a standard family lets say 5 about 3 cubes should do it, its up to u really use ur discretion) *When your meat is almost cooked remove it from the stock and keep separately. * Add water to the stock so it can be at least 3 quarters of the pot and let it heat up. *Once it has heated add palm oil into the pot. Once the palm oil is in the pot pour garri into a plate add cold water to the garri and stir then pour into the pot always use the wooden spoon to stir (as if you are drinking garri with ground nut) *Leave to cook for about 15-20mins *After 15-20mins add crayfish *Once you have washed the fish break the fish inside the pot and add your meat. *If you are using periwinkle wash this and boil it separately with water for like 10mins when you are also boiling your meat *Once this is done add it to the mixture *Add Maggi to give taste *pour Starch (Usi) into a deep plate with the native Salt (the colour of this salt is grey) and Akau (potash) and add water and mix into a light paste. *Pour the paste into the pot and start to stir the soup like your life depends on it (not to fast or hard but not too slow to avoid lumps) make sure that whilst you are doing this it is on low heat. * You need to be careful because the Akau inside the pot of soup will start to foam so, at this stage its not about leaving the soup cos there is something on TV. You need to watch it all the time. *Once you have poured the starch mixture inside the pot make sure you do not cover the soup as it will spoil *leave for another 10-15mins and it should be done ***BUT MAKE SURE THAT WHEN IT IS DONE U DO NOT COVER SOUP. *Once soup is finish eat it with yam or plantain or with Usi. |

Ingredients: A bag of gizzard Vegetable oil 1 red bell pepper 6 Roma tomatoes 5 Habenero pepper (rodo) ( or desired amount) One large red onion 2 Maggi cubes seasoned salt Curry Thyme Bay leaf 1. De-ice the gizzard then season with seasoned salt, Maggi cube, bay leaf and drop one habenero pepper. Cook until tender. 2. Blend the tomatoes, onion, bell pepper, Habenero and Maggi together. 3. Now you could either fry the gizzard or bake them in the oven till they are a nice brown colour. 4. In a separate pan heat the vegetable oil on medium heat, drop a slice of onion for the sizzle test, wait until the onion turns brown then add your blended mixture. 5. Add a bit salt, curry and thyme. And bay leaf. 6. Cook for 40 minutes on medium heat, do not stir to avoid splash, do not cover either or it will take longer to fry. 7. Add your gizzards and allow it to marinate for 10 additional minutes. 6. Add your sliced onions and green pepper for 3 minutes only…do not over cook or the peppers turn brown…Remember the green pepper and onions doubles as a garnishment. Enjoy.
