Am Alone: Egusi Soup 250g / 8oz fresh beef chunks 500g / 1 lb Assorted meat (ponmo, goat meat, bushmeat) 500g / 1 lb stockfish (pre-soaked) 500g / 1 lb smoked dry fish 250g / 8oz oxtail 250g / 8oz cleaned tripe(shaki) 2pt stock or water 300g /100z ground egusi 500g lb fresh tomatoes 250g / 85oz fresh peppers 2 large onions 3 teaspoons iru 4 tablespoon ground crayfish 500g/ 1lb fresh bitter leaf (washed to remove excessive bitterness) salt to taste 1l Stock ( 1 l hot water and 2 maggi cubes) *Wash thoroughly the beef ,oxtail , assorted meat and tripe(Shaki). Place a large pot with sliced onions season with salt add a drop of water or stock and cook for 30 minutes or until tender. *Add the washed dry fish and stockfish and cook for another 10 minutes. *When cooked turn out into a large clean bowl. *Wipe out the pot and place back on heat. *Pour the oil into the pot when hot add the ground tomatoes onions and peppers and fry for 10 minutes. *Add the ground egusi and iru stirring thoroughly and cook for 5 minutes. *Finally add cooked meats washed bitter leaf, Crayfish and the stock. *Allow to boil then simmer for 15 minutes. Serve hot with pounded yam, eba, plantain fufu, |

Ingredients: 2 fresh fish (tilapia, catfish or bream) 1 lemon or lime 50g Pepper Soup Spices 50g chopped chillies 100g fresh prawns, peeled 1 onion, chopped 1l stock or water 25g chopped scent leaves oil for frying Method: Clean the fish and cut into 8 steaks (including the tail). Wash and rub thoroughly with the lemon or lime. Season with salt then add a little oil to a pot and fry the fish for a few minutes then take out and set aside. Add the stock, along with the chopped onion, chillies and pepper soup spices. Bring to a boil and allow to boil rapidly for 15 minutes. Add the fish and prawns and simmer gently for 20 minutes. Check the seasoning and serve in soup bowls, garnished with the fresh leaves 1 Like

Is this the one ? Ingredients 4 laps of chicken 4 cooking spoonfuls of flour 2 cooking spoonfuls of vegetable oil 6 leaves of spring onions 1 bulb of onion 6 dessert spoonfuls of curry 2 teaspoons of thyme 2 maggi cubes Salt to taste Preparation 1. Cook washed cut chicken laps with onions, curry, thyme, maggi cubes and salt to taste. Cook till meat is tender. 2. Remove skin on the cooked chicken and cut the chicken into small bits before chopping. 3. Sieve flour into a pot and add the 4 dessert spoonfulscurry, thyme and 2 maggi cubes. Mix properly. 4. Pour vegetable oil into a pot and add the mixture. 5. Mix the two together thoroughly until it becomes coarse textured and free from lumps. 6. Add water to the mixture until it is watery. 7. Cook the mixture for 5 -8 minutes and stir while cooking to avoid lumps. 8. Add the chopped chichen and spring onions and leave to cook for 10 minutes. 1 Like |

ATAMA SOUP This rich-palm nut soup is highly spiced and flavoured with aromatic atama leaves. Atama is a spicy, aromatic leaf that can be used dried or fresh; the dried leaves are a lot more pungent in flavour Ingredients * 1 kg / 2 lb assorted meats (Beef oxtail, tripe, ponmo, bokoto & bushmeat) * 450 g / 1 lb stockfish (pre-soaked) * 1 medium dried fish (washed & flaked) * 225 g / 8 oz atama leaves (washed & shredded) * 225 g / 8 oz periwinkles (topped & tailed) * 225 g / 8 oz ground chillies * 225 g / 8 oz ground Crayfish * 1 lt / 2 pt palm-nut concentrate * salt to taste Directions 1. Wash the meat thoroughly and place in a large pot. Season with salt and ground chillies. Add some stock and cook for 30 minutes. 2. Meanwhile, wash the oil-palm and cook until soft to make the concentrate. 3. Add the washed smoked fish and stockfish to the pot of boiling meats and cook for 10 minutes. 4. Add the palm oil concentrate and atama leaves, bring to the boil and cook till slightly reduced and soup coats the back of a spoon. 5. You may not think fried plantain is a delicicious food, nor would you like to know which type of plantain is best for frying, cooking as fufu or pottage etc, but judging from the responses you may well be in the minority? |
