Is there a particular leave call Atama?

And can it be easily found in any market?, need to know

There is a specific leaf called atama.

You should be able to get it from the same place that sells bitter leaf, Utazi, okazi and such.

Happy cooking!!
Food / Re: About Veal Meat by AmakaOne(f): 2:15pm On May 05, 2009
Personally, I don't eat or cook veal as a matter of principle.

But for those that do, you may want to consider

There are four types of veal:

   * Bob Veal, from calves that are slaughtered a few days after birth.

   * Formula-Fed (or "milk-fed"wink veal, from calves that are raised on a nutritionally complete milk formula
     supplement.   Usually slaughtered when they reach 18–20 weeks of age.

   * Non-Formula-Fed ("red" or "grain-fed"wink veal, from calves that are raised on grain slaughtered at 22–26 weeks

   * Rosé Veal comes from its pink colour, which is a result of the calves being slaughtered at around 35 weeks

ATAMA SOUP

This rich-palm nut soup is highly spiced and flavoured with aromatic atama leaves. Atama is a spicy, aromatic leaf that can be used dried or fresh; the dried leaves are a lot more pungent in flavour

Ingredients

    * 1 kg / 2 lb assorted meats (Beef oxtail, tripe, ponmo, bokoto & bushmeat)
    * 450 g / 1 lb stockfish (pre-soaked)
    * 1 medium dried fish (washed & flaked)
    * 225 g / 8 oz atama leaves (washed & shredded)
    * 225 g / 8 oz periwinkles (topped & tailed)
    * 225 g / 8 oz ground chillies
    * 225 g / 8 oz ground Crayfish
    * 1 lt / 2 pt palm-nut concentrate
    * salt to taste

Directions

   1. Wash the meat thoroughly and place in a large pot. Season with salt and ground chillies. Add some stock and cook for 30 minutes.
   2. Meanwhile, wash the oil-palm and cook until soft to make the concentrate.
   3. Add the washed smoked fish and stockfish to the pot of boiling meats and cook for 10 minutes.
   4. Add the palm oil concentrate and atama leaves, bring to the boil and cook till slightly reduced and soup coats the back of a spoon.
   5. Stir in the Crayfish and Periwinkles, cook for 15 minutes until well blended, check seasoning and serve with pounded yam.

Food / Re: How Ripe Do You Like Your Fried Plantain? by AmakaOne(f): 9:43am On May 05, 2009
Ex Inferis:

my point, ma'am, is this entire thread is pointless and has no justification for its existence. of all the serious stuff you can ponder on, it has to be fried plantain? this topic has neither entertainment nor educational merits and adds no value to nairaland.

you might as well talk about the stuff i posted earlier.

and it seems all that fried oily plantain has deadened your sense of sarcasm.

Noted,

But if you had , erudite as you are, read the blurb regarding the forum before voicing your complaint perhaps you would not have found it necessary to do so?

Delicious foods and how to prepare them. Anything about food or drink goes here. This is the Nairaland kitchen!

You may not think fried plantain is a delicicious food, nor would you like to know which type of plantain is best for frying, cooking as fufu or pottage etc, but judging from the responses you may well be in the minority?
