kinah: The ingredients are Basmati rice Chicken Seasonings Mandi spice Onion Attaruhu (some ppl like spicy food so its opt) Oil Raisins Cinnamon Cumjn seeds Bay leaves Ginger and garlic paste Water First of all you'll need mandi spice, you can make it yourself or get it from stores.. I made mine myself. For the mandi spice, you'll need: Black pepper Cloves Nutmeg Cardamom Dry ginger powder Cloves Add them in a pan and heat on a medium heat(i normally wash em before roasting), allow to cool and then grind them to powder, set aside. When preparing chicken mandi, the chicken is baked after marinating it (i dont bake mine😎), so imma tell you how i did mine.. I start by seasoning my chicken, and cook for like 10mins, then keep aside. Heat oil in a pan, add chopped onions and fry for like 2mins, add ginger and garlic paste, fry till it starts smelling nice. Add nutmeg, cumin seeds, cinnamon and bay leaves, mix well for like 3-5mins, add chicken (like i said earlier, i cooked my chicken) add water and your mandi spice to your taste and allow to cook for abt 10mins.. For the baked chicken (This is when you'll remove the chicken from the stock and marinate with your mandi spice and seasonings, then bake in the oven till its crusty). For the rice Soak your basmati for 30mins and drain it.. Heat your ollive oil (i used groundnut oil😉) in a pan, add your soaked rice, raisins, stir fry for like 10mins... Remove and add the roasted rice to your chicken stock, add seasonings and put an aluminum foil over the pot and cover with a lid... Cook it on a low heat for like 10-15mins.. For the baked chicken (After baking it for like 15-20mins on low heat, you then add it to the rice and cover to cook for 10-15mins) Shikkenan✌ Hope you get it... If you get any question, ask... Here's my JOLLOF BEANS RECIPE Ingredients ➡️ Beans ➡️ Fresh tomatoes ➡️ Fresh pepper ➡️ Onions ➡️ Palm oil ➡️ Shrimp whole & powdered ➡️ Smoked or dry fish ➡️ Scent leaves 1 or 2 ➡️ 1 Carrot or 1 tablespoon lemon juice (optional) ➡️ Salt Beans preparation Select, wash and bring beans to a boil. Drain the water then pour fresh water to cook Dice 1 carrot and throw into the pot to help the beans get soft faster/ reduce the gas agent that causes bloating. 1 tablespoon of lemon juice serves the same purpose. However this is optional and can be skipped! Slice and add some onions to the boiling beans Add salt to taste Set beans aside once soft then make your sauce AROMATIC SAUCE Roughly blend your fresh tomatoes, pepper/onions and set aside Heat up some palm oil and add few scent leaves/whole shrimps to infuse into the oil Add your sliced onions and fry for few seconds The aroma should fill the atmosphere by now Add the roughly blend veggies Add fish, shrimp powder, salt, adjust seasoning and fry till it's dry Add your soft cooked beans to the sauce, add 1 or 2 fresh pepper, green pepper & spring onion for a more intense flavour, stir and cover to combine well Serve, eat and lick plate! #foodie #beans #EWA #beaninspiration 23 Likes

Ingredients: > Beef and beef bones, kponmo and offals > Ginger > Fresh yellow pepper [optional] > Seasoning cubes > Salt > Onions > Palm oil > Tatashe, Shobo [chilli peppers], Atarodo [habanero pepper], Tomatoes. NB: Ratio of the peppers should be Tatashe should be more than the rest, reason being tatashe gives redness to stews or sauces. Example of ratio is this: 2 Tatashe, 1 and half shobo, 1 atarodo, and 1 tomatoes. Whatever you use in measuring should be gauged this way. Or you can pick with your hands and pick tatashe more. Also remove the tatashe seeds before blending, because if not removed, it gives the stew or any sauces a little bitter taste. >> When you get your meat from the butcher, rinse lightly so you don't rinse the flavor of the meat out. Don't soak in water for long thinking you rinsing. >> Put beef, beef bones, kponmo, and offals in a pot. Add grated ginger, chopped onions, seasoning cubes, ground fresh yellow peppers and salt. Add water to submerge the proteins. Let it boil until soft >> In another pot, pour some palm oil. Let it smoke for 4 or 5mins. Add your mixed blended peppers [add ginger to your mixed peppers blend]. Add your beef stock, seasoning cubes and salt. Then add your proteins. >> Cook on medium low heat. Until thicken a bit and also the palm oil tops up. Omì obè shouldn't be too thick but in between. Tips: • If you wanna achieve a very tasty sauce or stews or soup, it all lies in your protein stock. Always prepare your stock very tasty, then you can use less seasoning cubes and salt in your stews or sauces. • Add bones to your stock preparations. Chicken stock, add chicken bones; fish stock, add fish bones; beef stock, add beef bones; prawns or shrimps stock, add the shells. The shells have great flavors. But rinse the shells well. And also rinse the other protein bones well before adding them. • Cook your stew on medium low heat. Reason: it gives the stew good taste, and helps the beef soften and also the beef absorbs the flavor of other ingredients thus gives the stew a very good taste. • when adding your stock, sieve your stock into the stew as against any particles[ginger, yellow peppers or onions].
