This is simply down to zonal marking.

All the tall boys have zones to mark. The procedure is for them to deal with whatever drops in their zone, rather than man mark.

Kante is a free man whose job is to disrupt/man mark the oppositions biggest threat and unbalance them from getting a good run and leap at the ball. This allows the zonal markers a fairer chance to win the ball. Kante job is not to jump with VVD, but simply to stop him running and gaining momentum.

Often with zonal marking, the zonal markers lose the aerial duel because the opposition have a clear run at the ball and have more momentum than a standing jump. Kantes job is simply to disrupt that momentum. That's why he is gumming body to VVD, and putting arms round him so VVD can't run.

I would expect other short players like Jorginho would have been doing the same to Matip

Lampard has copied Sarri exact template in the teams setup. The average position of every player is practically identical, Kante and Jorginho particularly. Not taking away from Frank, but the benefits of having sarri for just one year at Chelsea has aided Lampard's idea of football and in implementating it quicker.

I disagree . Sarri is a more system oriented Coach and Players did not like it, but if it was followed properly the results Would have been deadly (look at Napoli's matches and record in his last year there). The fact is our players where stubborn and needed more freedom which Lampard is doing right now. He allows the players more freedom to express themselves that's why kovacic,Pedro and to some extent Kante are no longer restricted.
