Will it come out as nice as with beans? I have just ordered the beans on Amazon cheesy but I might try the option with the flour some other time.

Peeling is quite easy. Just soak the beans in hot water for about two to three minutes in your blender. Pulse it a couple of times and then turn into a larger bowl. Just use much water to rinse out the peelings.

It was sweet not too sugary, moist on the inside,tasted very 'mangoish' I got some accolades from my family grin grin grin. I baked it this evening to eat tomorrow but they have already eaten almost half of it grin

I felt it wont come out fine because of the little water I added to rinse the blended pulp out but it was still nice.

Very simple, cheap and straight forward to make.

Lunch: Ekuru + boiled turkey wings.

Ekuru is a meal I enjoyed eating a lot while growing up. Ekuru is also called "ofu-loju" by some people. I dont know if none Yorubas know much about this delicacy ( In fact I don't know if it has an English name)

Ekuru is made from beans just like moin moin; the beans is peeled the same way u peel Ur beans for moin moin. However, the beans used for ekuru is blended plain white without adding seasoning, pepper, fish or salt....The blended beans is either tied nylon, kept in cups/small containers or wrapped in leaf the same way u would moin-moin. It is then cooked on high heat just like moin moin.

Once the ekuru is done u will need to prepare a badass peppered stew with enough locust beans, ponmo and if u like dried fish.

The ekuru will then be served with the spicy stew and a sprinkle of salt is added to the ekuru after which u will mash it with Ur hands to mix the stew to every nook and cranny of the mashed ekuru.

I actually prefer this ekuru to moin moin any day any time. It tastes so good.

Growing up we usually take it with ẹ̀kọ́ (solid pap) but I had this with Sweetened yoghurt.

NB: The stew is best enjoyed with ekuru if it is made with palm oil

Mango Cake

1¼ cup mango puree
2 eggs
¾ cup sugar
1 tsp baking soda
1 tsp baking powder
1½ cup AP flour

For the mango puree
I don't have a blender so i de-skined and mashed till it looked like something blended but I noticed it affected the cake...the fibers and lumps made some part of the baked cake very soft and inedible. I advice you de-skin and blend till it is very smooth

For the cake
Whisk/mix the eggs and sugar together
Add in the mango puree and mix properly
Sieve in your baking soda, powder and flour
Fold in gently
Pour the batter in a prepared pan
Bake in a preheated oven for about 30 - 40 mins

Maybe the food will finish and those who are promised to be given at a later date won’t get it. The local government chairman will run away with the bags of rice and beans

This is actually true. I don't know who brought the idea but meat is usually seen as a sign of respect grin

That is why at Marriage introduction, ( which is the formal meeting of the two families coming together to signal the lrelarion for a wedding) the bride's family will try to either serve the groom's family two meat per plate or a meat and fish per plate just to show them they are important people. Meanwhile the bride's family will serve themselves one each o.
