I'm looking for tips on how to make better jollof rice. When I make it, it's either too soggy or it burns. How do y'all make your jollof rice? It's so weird, because the first time I made it, it was perfect! Now I just can't seem to get it right again. Jollof-rice experts, help me!!! cry cry cry

The trick behind cooking jollof rice with out getting it burnt is to cook it under moderately low heat and try to cook it in a non-stick pan or non-stick pot,thats what i use anyway.The rice just needs to absorb the sauce you've poured over it under this temperature of flame,that doesnt mean its not cooked.

To make tasty jollof rice ,here's my big sister's secret recipe - ..blend a lot of crayfish with bell peppers (tatashe in yoruba) when blending the tomatoes ,onions and peppers to make your stew sauce for the jollof rice,make sure you have a lot of crayfish ,a lot of tatashe and less tomatoes (say one hand full of cray fish to 7 large tatashe and 4 tomatoes,and depending on how spicy you want it you can add 7 or 10 pieces of the usual small/tiny red peppers.


this will make a sauce for say 3 to 4 cups of rice ,dont forget to add your beef/chicken/turkey/ whatever Stock water.
she also uses canned tomatoe paste and Grates a bit of ginger when frying the tomatoe sauce in oil.

Finally ,do not allow the rice to dry up , leave a bit of boiling sauce to stir it with,before turning it off,jollof rice is never tasty when it is served dry,it has to be a bit savoury.

i had relatives who came over for summer holidays in august last year ,and we went for a picnic ,i had to chaperon my nieces ,nephews and the rest of the kids and aunties ,i was short of time so i begged my sister to make the rice.

when we got to the beach i served everyone , they kept asking me if i did the cooking ,i said no,it was my sister,by the time i got back to the tent the two coolers were empty.

i know some people like the taste of burnt rice and some people are allergic to crayfish in large quantities like that like my grandma and some people will only cook with vegetable oil ,i hate the smell of soya oil so i cook with olive oil cause of health issues.

so whatever works for you.

I know wat u mean bout soggy jollof,iv bin cookin perfect jollof for years,suddenly wtht warnin,it started getin soggy and tasteless,solution:be careful wth d amount of water u put init,u can always add more water if it isn't enuf. And d beauty of jollof is in d burning, grin grin
Also add butter towards the end,it makes d jollof really come alive,I don't realy lik puttin crayfish in my jollof(to me it mkes it taste lik concoction rice)except I'm cookin the fish flavored jollof grin

most of the time i'm in Nigeria,and if you are wondering if the meals you've been seeing here are prepared by me in Nigeria.Yes. Some of the non perishable ingredients i get when i travel abroad and the rest from lebanese/indian/ or Mediterranean stores in Victoria Island/Lekki.

Right now i'm looking around to get some Mascarpone Cheese to make some tiramisu this weekend,havn't found it in the stores yet.I miss my Desserts. cry

first off ,Congratulations on your newborn smiley and No ,the meal was prepared for the entire family,everyone dishes from what you see there on the dining table, so sometimes if i'm lucky i get to take a picture before they dig in.
For some reason i lose my appetite immediately after cooking,and end up eating the left overs after watching everyone
eat.
thanks though,when you've got picky folks in the house then you know presentation matters a lot. I've had a situation where everyone walked away from the table after the food was served hapharzardly undecided
