Healthy Recipes~ ~Citrus Potatoes With Blackened Cajun Chicken~ Prep Time: 5 mins Cook Time: 16 mins Serves: 4 Ingredients • 4 boneless, skinless chicken breasts • 3 cloves garlic, crushed • 2 tbsp Cajun seasoning • 500g Charlotte potatoes • Zest and juice of 1 lemon • 50ml olive oil • 1 tbsp chopped parsley Method Make 3 slits in each chicken breast but not all the way through. Rub over the garlic and sprinkle over the Cajun seasoning. Place under a preheated grill for 7-8 minutes on each side, until cooked throughout. Meanwhile, slice the potatoes into 4 and cook in boiling water for 10 minutes until tender, and drain. Mix together the lemon zest and juice, whisk in the oil and add the parsley, season well. Add the potatoes and mix well. Serve warm with the Cajun chicken. Smoked Haddock Fishcakes with Garlic Mayo Prep Time: 15 mins Cook Time: 15 mins Serves: 4 Best Potato Varieties Desiree King Edward Ingredients • 700g potatoes, diced • 500g frozen smoked haddock, defrosted • 100g frozen peas • Pinch saffron (optional) • 1 clove garlic, crushed • 100g mayonnaise • Oil for shallow frying Method • Boil the potatoes for 10 -12 minutes until tender. Drain and mash. Allow to cool. • Place the fish and peas in a large frying pan and cover with water. Bring to the boil and simmer for 5 minutes. • • • Drain and allow to cool. • Meanwhile, to make the aioli soak the saffron in 1tsp boiling water for 1 minute then add the garlic and mayonnaise and mix well. • Mix the potato, fish and peas together, season and mould into 8 fishcakes. Heat the oil and shallow fry in 2 batches for 3-4 minutes on each side until golden. • Serve with salad and mayonnaise. |

Please try this. It's very simple and believe me when i say "you are gonna love it" A Potato Dish for Julia 2 medium new potatoes 1 small clove garlic Salt 4 teaspoons butter Freshly ground black pepper. 1. Peel the potatoes and slice them very thin, about 1/8-inch thick. Peel and mince the garlic, then with the flat of your chef’s knife, mash it with a little salt into a paste. Work about 1 teaspoon of the butter into it and set it aside. 2. Heat 1 1/2 teaspoons of the butter in a small frying pan over medium-low heat, and lay in half the potato slices, overlapping slightly, to fill the bottom of the pan. Salt and pepper them lightly, and smear the garlic paste on top. Add the remaining potatoes, season lightly and set a small cover askew on top of the pan. After about 8 minutes, turn the potatoes by setting a small, sturdy plate on top of the pan and flipping them over and onto it. They won’t hold together in perfect shape, but don’t worry. 3. Heat the remaining butter in the pan and slide the potatoes back in. Let them cook, semicovered, for 5 minutes, then uncovered for a couple minutes more, until nicely browned. Slide them onto a warm plate, season to taste and let them mingle with whatever juicy meat you’re treating yourself to for dinner. Christmas breakfast is especially merry when this colorful frittata is on the menu. Ingredients * 1 medium onion, chopped * 1 medium green pepper, chopped * 1 garlic clove, minced * 2 tablespoons butter or margarine * 1/2 cup chopped tomatoes * 1/4 cup minced fresh parsley * 5 eggs, lightly beaten * 2 cups shredded mozzarella cheese * 1/2 cup soft bread crumbs * 1 teaspoon Worcestershire sauce * 1/2 teaspoon salt * 1/4 teaspoon pepper Directions 1. In a skillet, saute the onion, green pepper and garlic in butter for 5 minutes or until tender. Remove from the heat. Stir in tomatoes and parsley; set aside. In a large bowl, combine the remaining ingredients. Stir in reserved vegetables. 2. Pour into an ungreased 9-in. pie plate. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.
