I am transfering to the US next semester from Imperial College in Liverpool, UK to The Johns Hopkins University in Maryland.

I would really like to make contact with any fellow NLanders in that area ( Maryland) Baltimore to be exact. I've only ever been to the US on holiday and have no fiends or family in the Maryland area.

If anyone is out there and could show me around town I will really appreciate it.

Select a large enough pot to hold at least three to four times the volume of beans comfortably. While you

bring the water to a rolling boil, pick over the beans to remove pebbles, discolored beans, etc. In a colander,

rinse the beans and add to the boiling pot.

BOIL FOR ONLY TWO MINUTES!

Remove from the heat, cover, and let the beans stand/rest for ONE hour. Drain and discard the water. Add fresh water or broth to cover the beans two inches and let stand for another ten minutes.

The beans are now ready to be cooked.
80 percent of the gas-causing elements of all beans will be eliminated.

ogiri and dawadawa are sure not iru.  though they are local seasonings, but surely different in look, texture and taste,

iru/ dawadawa is fermented locust bean seed, ogiri is fermented sesame seed

I have been thinking of putting together a cookbook of Common Nigerian recipes (maybe with a few not so common ones thrown in for interest) with illustrations and stuff  as a hobby.

Do you guys think that people would be interested in getting a book like that.

You know how at the Check out isle at Marks & Spencers you have those glossy "How to ckook Thai food"  and "Simple Italian Dishes" type recipe books? I have never seen one on African food or is there one and I have not just come across it? .

Just got back from school,I've not cooked in three days and I have eaten all the cooked food I had
been working on an assignment.

Here is a sample meal timetable
I assume that no lunch is served during weekdays you are either at school or work.

Monday
Breakfast: Toast/Oatmeal
Dinner: White rice w/beans , vegetable stew and dodo

Tuesday
Breakfast: French Toast; Syrup; Orange Juice; Milk; Hot Tea
Dinner: Vegetable Yam porridge with fish

Wednesday
Breakfast: Oatmeal; Toast, Margarine & Jelly; Orange Juice; Milk; Hot Tea
Dinner: Fried rice with chicken and vegetables

Thursday
Breakfast: Cereal with eggs & toast
Dinner: Ewa Agoyin with fish

Friday
Breakfast: Plantain & Eggs
Dinner: Spaghetti Bolognese

Saturday
Breakfast: Akara w/Ogi or Pancakes/French Toast
Lunch: Ofe Nsala (fresh fish soup) w/pounded yam
Dinner: Jollof rice w/moimoi and assorted meat
Snack: African Salad/Ugba

Sunday
Breakfast: Yam & Eggs
Lunch: Okro Soup w/pounded yam
Dinner: Peppered gizzard w/dodo
Snack: Pepper soup

Most of the recipes for these foods are here on the board so that should make things much easier.

Garden egg stew
Aubergines and courgettes could be used as substitutes for garden eggs in this dish. Suitable for vegetarians.

INGREDIENTS:
1Kg / 2Ib garden eggs (cubed)
1 large Onion
1 kg / 2Ib fresh tomatoes
l00g / 4oz fresh chillies
4 tablespoon tomato puree
150ml / 5fl oz palmoil
salt to taste

Grind the fresh tomatoes, peppers and onions. Heat oil in a clean pot and fry the ground ingredients for 10 minutes. Add tomato puree and stir in thoroughly, cook for 5 minutes until well blended; finally add the cubed garden eggs. Stir thoroughly, allow to simmer through for 15 minutes. Remove from fire and serve with boiled rice or yam.

lkg/ 21b assorted meats (oxtail, tripe, ponmo & bushmeat)
450g/llb stock fish(pre-soaked)
450g / llb dried fish (washed)
225g / 8oz whole dry prawns (cleaned)
225g / 8oz ground ogbono seeds
225g/8oz ground crayfish
25g / 8oz ground pepper
25g / loz iru
I medium onion
290ml /10 fl oz palmoil
3pt stock or water
salt to taste
Wash the assorted meats thoroughly and place in a pot.
Add the sliced onions, ground pepper and some stock or water.
Cook for 30 minutes.
Add the washed smoked fish and stockfish.
Cook for a further 10-15 minutes adding a drop of water or stock as needed to stop it from burning.
In another pot, heat the oil and fry the ground seeds for 3 minutes to bring out the nutty flavour.
Gradually add the stock and whisk until it draws and bubbles.
Add the cooked meats peppers and crayfish.
Dissolve the iru (locust bean) in a little stock and add to the soup.
Allow to simmer for another 10 minutes, check seasoning and serve hot with pounded yam.

VARIATIONS
OGBONO SOUP WITH BITTER LEAF

225g / 8oz washed bitter leaf added to main recipe.

OGBONO SOUP WITH UGWU
500g /1 lb shredded ugwu leaves added to main recipe.


you can also add mushroom and Okro to this soup to give it a different flavour.
I'm not sure where you are exactly and what of the above ingredients is available there. but Iru and ogbono are easily available in most places I think.

Onions is a no-go area for Edikang-Ikong soup. A typical preparation of the dish does not involve Onions, the elderly women will catsigate you for putting it.The same goes for knorr/magi cubes. The blended Cray fish produces a far more superior taste than Knorr/Magi cubes and traditionally it is not part of the recipe. I know of lots of non-Efik indigenes who add Aji-no- moto or fry the leaves in Palm oil to get that unique taste. The key is getting the right ingredients and the right timing of putting them in the soup.

You lifted your recipe from a mini-Project done by secondary school students based in Abuja, so I was not surprised to see onions in your list of ingredients.


This is the way that I have always been taught to cook it and I have never had any complaints.
how about you give us the "typical preparation of the dish" because What I put up is what i know to be "typical"?

I think this guy has been looking for an opportunity to get out of this arrangement and you just happened to unwittingly let him off the hook.

He is not worth all these tears that you are crying for him sistawoman and think of the effect this drawing out of a bad situation is having on the kids.
Don't think they are not aware of what is happening and it is not affecting them badly.
they are probably right now blaming themselves that if you did not have to be there for them after school this madman would not be behaving the way he is. You know kids can be irrational like that.
Be there 1st for your kids and make sure they are OK.
This grown man who is behaving so irresponsibly is obviously not thinking about them.

Woman up and kick his *ss to the kerb, both physically and mentally and be a mom to your kids. His mother has done mothering him but your kids still need you.

This type of selfishness annoys me sha!!

HOMELY WEIGHTS AND MEASURES
(Where a scale is not available)
LIGHT INGREDIENTS
Flour, Cornflour, Custard Powder, Bread-Crumbs, Grated Coconut
1 Heaped tablespoon 1 oz.
1 " dessertspoon 1/2 "
1 " tablespoon 1/4 "
2 " tablespoon bread-crumbs 1 "
1 1/2 " tablespoon grated coconut 1 "

LIQUIDS
1 Beer Bottle 4 cups or approx. 1 1/4 pts.
2 Cups approx. 1/2 pt.


SOUPS
1. Use everything perfectly fresh and as little fat as possible.
2. Boil gently all the time.
3. Use sufficient seasoning but not in excess.
4. Cook ingredients well.
5 Season before serving.


FRIED FOODS
1. Dry Frying
No fat is placed in the pan, as the food contains sufficient for frying,
2. Shallow Frying
Sufficient fat is used to prevent the food from sticking to the bottom and burning. When the food is brown on one side it is turned over and browned on the other, e.g., fried plantain.
3. Deep Frying
Sufficient fat is used to entirely cover the food

STEWED FOODS
1. Use a saucepan or stew-pan with a well fitting lid.
2. Cut meat into neat pieces of moderate size.
3. Allow about 3/4 pt. liquid to each lb. meat.
4. For a Brown Stew, fry the meat on both sides before stewing; this helps to retain the juices in the meat and also gives it a nicer flavor.
5. Cook slowly and steadily; do not allow the stew to boil.
ROASTING
1. Have a good bright fire or hot oven at first.
2. Weigh meat before roasting.
3. Allow 15 minutes to the 1 lb. and 15 minutes over for beef.
4. Allow 20 minutes to the 1 lb. and 20 minutes over for mutton.
5. Allow 25 minutes to the 1 lb. and 25 minutes over for stuffed meats.
6. Use only the best joints for roasting.
7. Have a hot oven for the first ten minutes, to form a coating on the meat, and then cook gently.
8. Baste frequently.

Karma if you don't like palm oil you could use carotino oil.

"Carotino is a blend of all-natural red palm fruit oil and canola oil. It has a red hue that comes from the high levels of carotenes (vitamin A) that are naturally present.
