This is a special kind of pan , not the usual one for frying , right ?
probably not for deep frying because it’s shallow. But otherwise I’m sure you can cook whatever fits in it

Is it known interchangeably as Masa and Waina by the Hausa folks?

Sure why not

Ingredients
4 cups of waina rice (it's different from the regular rice that we eat, it's kinda broken and white, it's used to make rice swallow aka tuwon chinkafa)

1 tablespoon active yeast
1 teaspoon baking powder
1/2 cup plain yoghurt (optional)
Onion (optional)
Sugar to taste

--Soak the rice for at least 6 hours, take out half a cup of the raw rice and cook till soft
--Blend the rice i.e the soaked and cooked rice together (you can add onion but it's optional though)
-- After blending, mix in the yeast and allow to rise for about 40mins
to 1 hour
-- After which you mix in your sugar, baking powder and yoghurt
-- Fry the mixture in a masa pan until golden brown on both sides.

You can serve it with the conventional masa soup or any other sauce of your choice. It also goes well with Suya or with tea. Enjoy smiley

Hello! Im good thank you. Trust you're doing good.

Okay for the dough
For every 4 cups of flour i use 125g of butter, little salt when im not using simas butter and 1 tbsp of baking powder then water to create a dough. I'll keep and allow it to rest (breathe)πŸ˜‚

For the fillings
I cook and debone my chicken (breast preferably) and put in a food processor or mortar to grind into thinly slice. Keep aside then peel my onions and dice into smaller parts, then stir fry in a pan with little oil or butter. I add little scotch bonnet cuz i dont like it spicy, go on to add my grinded or processed meat, spices and seasonings the stir until it looks golden and dry with a texture similar to cotton candy, If its done, i then allow to cool while i prepare to start making dem piesπŸ’ƒπŸΎ i break egg in a small bowl and a brush to bind the edge of the pie. I cut the dough into smaller pieces,roll out,place on the cutter, add the already made fillings, brush egg on one side and cut. When im almost done, i reheat my oven and place my baking sheet, place them on top and egg wash for golden glaze.

it's not a trade secret actually so don't worry. Good luck with your baking, and I hope your creative skills shine. Dont hesitate to reach out if you need any tips or guidance.

As for the air fryer, don't have one, so I'm not sure if it can be used to bake the pies or how they would turn out. Oven baking works best for me!

That's impressive! I appreciate the feedback here. Just before I got this insightful feedback from you, I had initiated moves to drill down further and get this info from a few other good sources. So, I got some insights from Jemimah and when your feedback came in, it enabled me to quickly understand your post better. I practically have all the needed ingredients ready and will get down to it in the coming weekends. This last weekend was simply used to do some "culinary intelligence gathering" so that things will pan out right the first time of trying.

I'll try out your fillings recipe as stated in your post and any other recipe as well to see how the tastes pan out in the coming weeks. The fact is that I now know that procedure matters a lot in the prep process and you can get about 10 to 12 chicken pies (or meat pies) depending on the sizes of the kneaded dough cuts (using the dough cutter) from 500 grams of self-raising flour which I already have.

Last but not least, I found out from further research that aside from using the classic kitchen oven, you can also bake chicken pies (and meat pies) without ovens and air fryers too can be used to bake chicken pies as well! Chicken pies baked in Air Fryers take about 22 minutes, in regular ovens it takes 45 minutes, and without ovens it takes about 60 minutes!
